It’s back to school season! Which means we are back at it, schedules are full, and us parents are going through it. But its also a special time too! We get to see the another first for our kids. Tears usually involved. And during these special times, for me at least, I like to do something special for the kids and start the day with a healthy breakfast. The rules? It has to be easy!
I won’t spend too much time on the introduction. This is a do as I say not as I do type of recipe. I tend to just throw all the ingredients together in the bowl and hope for the best. But to maintain consistency, my friends, I will write the instructions out as they should be. Also, please note when it comes to cooking or baking I am a measure with your heart kind of girl. That said I did do my best in putting the amount that I use. My suggestion is you measure with your heart too and find what works best for you.
I usually make this recipe on Sunday (or a day that’s more relaxed) and then freeze it for the rest of the week. The kids love them, and they kind of have that waffle cone type of flavor profile!
This recipe is delicious and very modifiable. The best part is it’s easy! I just wish I could help you with the dishes after!
Equipment
- Waffle Iron
- Whisk
- Spoon
- 2 Medium bowls
- Fork/Tongs
- Plate
Recipe
- 2 cups flour
- 1/4 cup sugar (add 1/4 cup more if you like them sweeter)
- 4 Teaspoons Baking Powder
- 1/2 Teaspoon Salt
- 2 Tablespoons Cinnamon
- 1/2 cup butter (melted)
- 1-2 Tablespoons Vanilla Extract
- 1 1/2 cups Milk
- 2 large eggs
Instructions
1. Preheat your waffle iron!
2. In a medium sized mixing bowl mix together dry ingredients until combined.
3. In a separate medium sized mixing bowl add wet ingredients until completely combined.
4. Slowly combine your wet ingredients to your dry ingredients, mix until almost smooth.
5. Once your ingredients are all combined put about 1/4-1/2 a cup of batter onto your waffle maker. The amount really depends on your waffle maker so you may have to play with the amount.
6. Serve hot or put them in the freezer and warm them up later. I like to put peanut butter and honey drizzle on the top. Of course use whatever makes your heart happy. Also sprinkles are always an excellent addition.
